I love Spaghetti squash, it is delicious and it is a great replacement for noodles to accompany any sauce of your choice. I love it because it is delicious and because it is low in calories too. Perfection can be accomplished with this vegetable. A spaghetti squash can be prepared in the oven or the microwave, I prefer the tastes that exist when something is roasted in the oven and so my recipe is for the oven method.
Ingredients:
1 ripe yellow spaghetti squash (about 3-4 pounds in size)
oil, salt, and pepper to taste

Directions:
1. Preheat oven to 400 degrees F.
2. Start by washing the exterior of your spaghetti squash under a faucet while wiping the exterior with your hand or a vegetable brush. Dry it well so it does not slip when you cut it in half.
3. Using a large knife, cut the squash in half lengthwise. Set pieces down with insides facing up.
4. Using a spoon, scrape out the insides of the squash until insides are completely clean. Make sure to discard all the seeds and stringy things.

5. Drizzle a small amount of olive oil on cut side of the squash and rub it around with your fingers. Then sprinkle with salt and pepper.
6. Place the squash halves, cut side down, on a baking sheet. Place in the oven and bake until tender . It will take about 35-45 minutes to become tender, depending on the size of your squash.
7. Remove the squash from the oven, make sure it is ready by sticking a knife into it. If it goes in easily then it's good. (If you have over cooked the squash it will taste fine but the texture will be creamy and you will not be able to make the spaghetti like strands). Flip the squash over carefully with a spatula and let cool for about 10 minutes.
8. Once you are able to touch the squash without getting burned, use a fork to begin scraping out the flesh of the squash. Gently scrape the sides and all around, the insides should come out in stringy spaghetti like strands.

9. You can then serve the squash as is or remove it to a serving plate and serve with your favorite sauce and enjoy! I served it with my homemade traditional spaghetti sauce.
