Bruschetta

 This is a family favorite recipe that my mother used to make all the time when I was growing up. It is so simple and so delicious. It makes for a great appetizer or even as a topper for Italian pasta dishes.

Ingredients:
6 roma tomatoes, chopped
1 cup basil leaves or 1/2 cup minced basil leaves
1 Tbsp minced garlic
3 Tbsp olive oil
1 Tbsp balsamic vinegar
garlic salt to taste
Parmesan cheese, grated (optional)
1 large baguette, sliced and toasted
Directions:
1. Place the chopped tomatoes in a medium sized bowl. Add the basil and garlic to the tomatoes and mix around. Add the olive oil, balsamic vinegar, and a dash of garlic salt. Combine all ingredients so that they are all equally spread throughout. Refrigerate and let flavors meld for at least one hour or until ready to serve.
2. When ready to eat, top toasted sliced bread pieces with Bruschetta mixture and a sprinkle of Parmesan cheese. Enjoy!
