On a recent trip to Costco, I decided to buy some Mahi Mahi fillets instead of our usual Salmon purchase. I decided I wanted to make some fish tacos but instead of doing a Mexican spiced Mahi Mahi, I decided to use blackened Mahi Mahi. This turned out wonderful, next time I may rub a little more seasoning on the fish because there was plenty of room for adding more flavor.
Ingredients:
Blackening Seasoning:
1 1/4 tsp garlic powder
1 1/4 tsp ground black pepper
1 tsp white pepper
1 tsp onion powder
1 tsp ground cumin
1/2 tsp salt
1/2 tsp paprika
1/2 tsp cayenne pepper
2 - 4oz Mahi Mahi Fillets
1 Tbsp unsalted butter- melted
Directions:
1. In a small bowl, combine all spices. Set aside.
2. Pour melted butter into a shallow dish. Dip each fillet into butter, turning once to coat both sides. Sprinkle both sides of fillets with blackened spice mixture, and gently pat mixture onto fish. Keep remaining blackened mixture for other meals.
3. Heat a medium skillet to medium-high heat. Place fillets into hot pan without crowding. Carefully pour remaining melted butter over each fillet. Cook until fish has a charred appearance, about 2 minutes each side.
4. Enjoy fillets along with appropriate side dishes or use as taco meat. Enjoy!
