I had some leftover ingredients that I needed to use and so I came up with this recipe. This turned out really good. The Parmesan and Panko worked excellent together and made a delicious coating on the fish. I will most definitely do this one again.
Ingredients:
1/3 cup Parmesan, freshly grated1/3 cup Panko breadcrumbs
1 Tbsp fresh parsley leaves, chopped fine
salt and pepper to taste
1 lemon, juiced
1 egg white
2- 4oz Mahi Mahi fillets
Directions:
1. Combine the Parmesan, breadcrumbs, Parsley, salt and pepper in a flat dish with edges. Combine ingredients so that they are equally intermixed.
2. In a large bowl whisk together the lemon juice and the egg white.
3. Heat a medium saute pan to medium heat. Meanwhile, dip Mahi Mahi fillets in the lemon juice egg mixture to fully coat, next place the fillet in the Parmesan breadcrumb mixture and pat the Parmesan and breadcrumb mixture to coat the entire fillet. Repeat with each fillet.
4. Place the breaded fillets into the hot pan. Cover the pan with a lid and cook about 4 minutes on each side, lower heat if breading begins to burn. Cook thoroughly. Serve immediately and with lemon wedges. Enjoy!
