I made these for Grandma Huber since she had a nice garden fresh zucchini from her neighbor that needed to be used. They were super chocolatey good.
Ingredients:
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 3/4 cups grated zucchini
1 cup semi sweet chocolate chips
Directions:
1. Preheat oven to 350 degrees F. Grease cookie sheets.
2. In a medium bowl, cream together the butter, sugar and brown sugar until smooth. Beat in the egg and vanilla.
3. In a separate bowl, combine the flour, cocoa, baking soda and salt; gradually stir into the creamed mixture. Fold in the grated zucchini and chocolate chips.
4. Drop by rounded spoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Enjoy!
