Breakfast Panini (with Tomato, Basil, and Avocado)

I would have never thought to put basil and avocado together by any means but Nick and I ate at this fabulous crepe shop in Santa Monica where we were shown the light that those two ingredients work great together. I was inspired by the restaurant to make some breakfast paninis with those ingredients and they turned out just as great as the crepe shop. A great break


Serving Size: 1 Panini
Ingredients:
2 slices of sourdough bread
1 tsp room temperature butter
garlic salt and pepper to taste
6 basil leaves
1/2 roma tomato, sliced thin
1-2 scrambled eggs, prepared to our liking
2-3 slices of cheddar cheese
1/2 avocado, sliced

Directions:
1. Turn on panini maker.
2. While panini maker is warming up, spread butter on one side of each piece of bread and then sprinkle the buttered sides with garlic salt and pepper.
3. In between the un-buttered sides of bread; place the cheese, basil, tomato, avocado, and eggs.
4. Place sandwich on panini maker until cheese is melted and bread is toasty brown.
5. Remove from panini maker, cut in half and enjoy!
