Italian Sausage Tortellini Soup

 I had some zucchini and bell peppers that I wanted to use and so I searched allrecipes and found this delicious looking soup recipe with tortellini in it. I have never had a soup with tortellini in it and it sounded like a great idea. Since this recipe was rated high, I decided to give it a try. This was a delicious soup and it was nice that I could prepare most of it in my slow cooker. 



Ingredients:
1 Tbsp olive oil
1 large yellow onion, chopped
1 red bell pepper, seeded and chopped
2 cloves garlic, minced
1 (3.5 ounce) link sweet Italian sausage, casings removed
1/2 cup red wine
3 cups beef stock
1/2 cup water
1 15 ounce can diced tomatoes
1 tsp dried basil
1 tsp dried oregano
2 zucchini, chopped
8 ounces spinach and cheese tortellini
1 Tbsp chopped fresh parsley
2 Tbsp grated Parmesan cheese for topping (optional)

Directions:
1. Heat the oil in a large saute pan to medium heat, add the onions and bell pepper. Saute for 5-10 minutes.
2. Add the sausage to the saute pan, cook until well browned, about 5-10 minutes. Add the red wine to the saute pan and cook until red wine dissipates.
3. Add saute pan ingredients to the slow cooker. Add the beef stock, water, diced tomatoes (including juice), dried basil, and dried oregano. Stir. Cook on Low for 6 hours or High for 3 hours.
4. About 1 hour before serving, add the zucchini, tortellini, and parsley to the slow cooker. Cook on high for 1/2 hour or on low for 1 hour. Serve warm and garnished with Parmesan. Enjoy!
