Steak with Mushroom Shallot Sauce

Nick cooked us some lovely steak tonight. We do have a trend that whenever we are to have steak, Nick will be the chef. This was very good and a change from our routine mushroom, butter, and onion sauce.



Ingredients:
2 well-trimmed tenderloin beef steaks
salt and pepper to taste
1 tbsp olive oil
1 large shallot (about 1/4 cup), minced
1 package sliced Cremini mushrooms
1/4 cup sake (rice wine)

Directions:
1. Sprinkle both sides of steak with salt and pepper. 
2. Heat a large skillet over medium-high heat until very hot. Add steaks and cook 5 to 6 minutes for medium-rare or until desired doneness, turning steaks over once. Transfer steaks to platter; keep warm.
3. Add oil and shallot to drippings in skillet, cook 1 minute, stirring often. Add mushrooms and cook until liquid evaporates and mushroom mixture is golden, 8 to 10 minutes, stirring frequently. Add sake and 1/4 cup water; cook 30 seconds, stirring constantly. 
4. Spoon mushroom shallot sauce over steaks. Enjoy!
