Banana Bread


I am on a roll this weekend with baking. I'm still trying to use up those bananas in my freezer and so here is a banana bread recipe. This recipe was shared with me by my friend Megan, she is a baking queen.
        
Ingredients:
5 very ripe bananas
4 eggs
2 sticks butter
2 cups sugar
2 tsp vanilla
2 cups wheat flour
1.5 cups white unbleached flour
2 tsp baking soda
1 tsp salt
 
Directions:
1. Preheat oven to 300 degrees F
2. Grease 2 loaf pans
3. Combine sugar and butter first, mix until it forms a paste
4. Then add vanilla, bananas, and eggs to butter mixture, blend well.
5. In a separate bowl, combine dry ingredients- flour, soda, and salt- mix together well
6. Add dry ingredient mix to banana mixture. Blend together and mix until a dough is formed
7. Pour dough evenly into two loaf pans, about 2/3rds full in each
8. Bake for 90 minutes or until toothpick comes out clean. Muffins take about 20 minutes
9. Once cooked, enjoy!
